Maria's Cranberry Sauce

Ingredients

24 ounces
Fresh Cranberries (rinsed and picked through)
1 cup
Raw Sugar
2 cups
Orange Juice
2 tablespoons
Orange Zest

Mandarin Oranges (peeled, each section cut into 3 pieces)
2 tablespoons
Lemon Zest
1
Lemon (juiced)

Apples (peeled, cored and diced)

Description

This sauce can be more or less piquant depending on the amounts of sugar, lemon zest and lemon juice that you use. Remember when starting out that the cranberries are very tart. Chef Diane suggests adding a couple tablespoons of rum to the mixture as it cooks for an extra kick.

Instructions

  1. In a medium saucepan over medium heat, dissolve the sugar in the orange juice.
  2. Stir in the cranberries and cook until the cranberries begin to pop (approximately 10 minutes).
  3. Stir in the orange zest, orange pieces, lemon zest and lemon juice.
  4. Remove from heat and stir in the diced apple.

Notes

  1. Diane recommends adding 2 tablespoons of rum to the mixture and allowing it to cook with the cranberries as part of step 2.
