Chef Sara’s Chocolate-Covered Strawberries

Strawberries (preferably organic)
8 ounces
Vegan Chocolate Chips (roughly 1 cup, or chopped semi-sweet chocolate)
2 ounces
Vegan White Chocolate Chips (roughly ¼ cup, optional)

Description

Is there anything more romantic than chocolate-covered strawberries? Not that Chef Sara Boan of the Catskill Animal Sanctuary’s Compassionate Cuisine [1] program can think of! Though this classic dessert has a reputation for being fancy, making them is a snap. They look beautiful and elegant with only one kind of chocolate, but adding a drizzle of vegan white chocolate makes them fit for a queen. Or king. Or your favorite little prince or princess.

Instructions

  1. Rinse the strawberries and pat dry. Line a baking tray with parchment paper or a silicone baking mat.
  2. Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, stirring frequently until the chocolate is just melted. (Alternatively, melt the chocolate in the microwave by heating for 30-second intervals, stirring after each interval until the chocolate is just melted.) Allow the chocolate to cool for a few minutes until it’s at body temperature to help ensure that your chocolate coating will be shiny and beautiful.
  3. Holding a strawberry by the stem, swirl it in the melted chocolate, tapping off any excess on the side of the bowl, and place it on the prepared baking tray. Repeat with the remaining strawberries. If desired, melt the optional white chocolate chips in the microwave and use a fork to drizzle the melted white chocolate over each dipped strawberry.
  4. Transfer to the refrigerator for 10 minutes to allow the chocolate to set. These are best served within 2-3 hours.
